| Baked Fish in Tahini Sauce |

Ingredients:
- 1 whole fish, approx 2 lb (1 kg)
- ½ cup olive oil or nut oil *
- 1 medium onion, chopped
- 1 cup tahini sauce without parsley *
- ¼ cup finely chopped parsley and wedges of lemon to garnish
Directions:
- Clean and scale the fish, leaving on the head but removing the eyes. Salt inside and out, then refrigerate for several hours. Allow it to return to room temperature before cooking. Rub the fish with half the olive oil and bake in a moderate oven until cooked. The flesh should be white and flake apart easily under a fork.
- Fry onions lightly in the remainder of the oil, until transparent. Drain.
- Mix the onions into the tahini sauce, pour over the baked fish and bake for a further 10 minutes in a moderate oven.
- Garnish with chopped parsley and wedges of lemon. Serve hot, or cold with salads.

| Baked Macaroni with Meat |

Ingredients:
- 12 oz (375 g) macaroni pasta
- 2 large onions, finely chopped
- ¼ cup ghee or substitute *
- 1 lb (550 g) coarsely ground meat
- 2 teaspoons salt
- ½ teaspoon pepper
- ½ teaspoon mixed spices
- ¼ teaspoon ground cinnamon
- 1 tablespoon vinegar
- 4 tablespoons tomato paste
- 1 cup tomato juice or canned tomato soup
- ½ cup water 4 eggs (optional)
- ½ cup grated cheese
Directions:
- Cook the macaroni is salted boiling water until tender. Drain, rinse in cold water, drain again and set aside.
- Sauté the onions in the ghee, add the meat and cook until brown all over – approximately 10 minutes. Add the salt, pepper, mixed spices, and cinnamon, the stir in the vinegar, tomato paste, tomato juice or soup and the water.
- Cover and simmer gently until meat is tender --- 30-35 minutes.
- Spread half the cooked macaroni in an even layer over the bottom of the casserole dish. Pour the meat mixture evenly over it, then cover in an even layer with the remaining macaroni. Beat the eggs and pour over the top of the macaroni, allowing it to seep through the entire mixture.
- Bake in a moderately hot oven, 400F (200C), for 40 minutes. Remove from oven and while still hot, sprinkle with grated cheese. Serve warm.
